Mini Cheddar Scones

Mini Cheddar Scones

Goes great with Terry’s EXTREME SMOKIN Hot Sauce.

Ingredients:

  • 2 ¾ cups All purpose flour
  • 2 tsp. baking powder
  • 1 tsp salt
  • ¼ tsp baking soda
  • 10 tbsp. cold unsalted butter, cubed
  • 1 cup shredded cheddar cheese (I used extra old)
  • 1/3 cup minced fresh chives
  • 1 cup buttermilk
  • 4 tbsp. TERRY’S SMOKIN EXTREME UNIQUE HOT SAUCE
  • 1 egg beaten with 1 tbsp. water

Method:

  • Preheat oven to 375˚. Line a baking sheet with parchment paper.
  • Whisk together first 4 ingredients. Cut butter with a pastry blender or fork until pea-sized. 
  • Stir in the cheddar and chives, then add buttermilk and 2 tbsp. water. Knead gently just until blended. 
  • Turn dough out onto a lightly floured surface and pat into an 8 inch square. Cut dough into 2 inch squares then cut squares into triangles. Arrange scones on a prepared baking sheet, spaced 1 inch apart, and brush with egg-water mixture. Bake until golden, about 25 minutes.
